Nam O fish sauce is famous with the secret of making fish sauce "3 fish 1 salt" separately and completely by hand. Made from anchovies, which are only available from March to August of the lunar calendar, the fish is carefully selected, fresh and not too big or too small. After that, the fish is washed with sea water because fresh water will lose the natural fish taste. The jar of salted fish must be made of jackfruit wood and must be filled with grit and broom at the bottom of the jar. The stage of fish sauce filtration must be filtered by ransom to ensure a pure, aromatic fish sauce. For every 200-300kg of fish, put in a jar and incubate after 12 months will produce from 100-150 liters of pure fish sauce. The rest is filtered into fish sauce type 2, type 3 sold at affordable prices.
In particular, the salt used to brew Nam O Da Nang fish sauce is large-grained salt from the waters of Binh Thuan, Nha Trang or Quang Ngai. Salt is dried for 5-10 days, then stored in jars for 1-2 years, then used that salt to salt fish.
