In 1919, Isadore Shlafman came to Montreal and there he opened the first bagel shop called Montreal Bagel Bakery on Saint-Lawrence Street. In 1949, he moved to Fairmount Street and renamed the bakery The Original Fairmount Bagel Bakery, which is what the Fairmont Bagels are today.
After all these years, the Isadore family continues to make cakes according to traditional recipes and ingredients. All breads are still hand-rolled and baked in a wooden oven and are sold to diners only after the baking is complete.
