The restaurant was founded by "Mama" Ninfa Laurenzo in 1973. Mama Ninfa started by grilling beef steak and serving it in tortillas from the family tortillas making "Tacos al Carbon" (later known as "Fajitas"), is the basis for the Mama Ninfa legend in Houston and in Tex-Mex (Texan and Mexican ) culinary history. Mama Ninfa passed away in 2001. In 2005, the restaurant was acquired by Legacy and Executive Chef Alex Padilla, who have since restored and improved the restaurant.
