Shojin ryori (Vegetarian cuisine) was brought to Japan along with Zen teachings in the thirteenth century. As natural parts of everyday life, cooking and eating have always been considered forms of spiritual practice. Shojin ryori embodies this point of view in a cuisine that is in harmony with Buddhist ideals, creating satisfying, nutritious meals of fresh seasonal vegetables, herbs and wild plants while not stripping animal life. Enjoying food at Shigetsu both nourishes the body and brings out a true Zen taste. Shojin-ryori, served here, adheres to the traditional Buddhist vegetarian cooking rules, which means no animal products are used for preparation.
