Quince Saigon is a sister restaurant to Quince Eatery & Bar in Bangkok, featured in the Michelin Guide Thailand, published in 2017. The restaurant is located in a French colonial building in a relatively quiet part of the center. city center. The dark yellow-gray wall with the minimalist matte gold-plated sign of Quince gives the restaurant a chic exterior, but has an extremely warm interior.

French chef Julien has trained in the culinary arts in Europe in top kitchens in France and London, and later in Melbourne. As a result, he created a menu emblazoned with Melbourne's fusion cuisine, based on fresh local produce.

Quince places itself in the "casual fine-dining" category, where every dish is created from a unique and creative combination of fresh local produce and high-quality imported ingredients. This concept is clearly reflected in Julien's menu. At first glance, it seems quite simple with only one page, however, there is nothing trivial. At Quince, salads and appetizers are meticulously crafted with a variety of flavors to awaken the taste buds. Diners can choose from a salad with beetroot, mulberry, feta cheese and cashew granola; The delicate sweetness of beetroot blends well with the mild sourness of mulberries, the richness of cheese and the crispiness of cashews making it a good start to a hearty meal. Another special appetizer at Quince is "Veal sweetbread" with ajo blanco and walnut flakes. "Sweetbread" is a term used to refer to meat from the pancreas or thymus, this is the most delicious part to make dishes, especially when combined with foie gras, but this part is often small. At Quince, sweetbread is cooked to perfection and melts in your mouth like butter.
