Hanoians who are addicted to coffee are no stranger to Café Giang, especially with egg coffee. Café Giang was opened by Mr. Nguyen Van Giang in 1946, when he was working as a bartender for the 5-star Sofitel Metropole Hanoi hotel. Nguyen Chi Hoa (65 years old) is the 8th child, also the youngest child in a family of Hanoi origin. Used to make very expensive cappuccino drinks with coffee, cream, whey... For foreign guests, Mr. Giang wondered that Vietnam has a lot of fresh and delicious eggs, so from coffee, eggs and sugar, milk, it is possible to make a delicious and attractive drink, the price is still affordable for Vietnamese people? That curiosity succeeded. In 1946, the chef's Giang coffee at number 39 Nguyen Huu Huan began serving diners this strange, delicious and healthy drink.

Although the location has been moved twice, the recipe for egg coffee is almost unchanged from the early days 70 years ago, with the main ingredients being egg yolk, Vietnamese coffee powder, milk. thickened with sugar, butter and cheese.

After being filtered by the filter, the coffee will be brewed in a small cup, before being mixed with beaten egg yolks (well beaten) and other ingredients. The cup is placed in a bowl of hot water to retain heat. Mr. Giang developed recipes during the period when sugar and milk were very scarce in Vietnam. She used egg yolk to replace milk. No matter how much time passes, this wonderful coffee with egg, milk, and coffee ingredients will fascinate and make you unable to forget its taste. But what makes Giang's coffee unique and different from other restaurants' coffee is the perfect blend of coffee and eggs, in order to minimize the stale and fishy taste of eggs. Although there are many other drinks on the menu: such as egg cocoa, egg green beans, egg rum, egg green tea, egg beer... but egg coffee is still the first choice.

The founder of egg coffee, Mr. Nguyen Van Giang gave birth to 8 children, only the youngest son, Nguyen Chi Hoa, worked as a chef in his father's footsteps, and also followed Giang's coffee business from the age of 17. Later, a sister of Mr. Hoa, after working as a teacher, also opened a coffee shop, which is Dinh coffee on the 2nd floor of a house on Dinh Tien Hoang street, overlooking Hoan Kiem lake. An older brother of Mr. Hoa, after working as an auto mechanic, also returned to open a coffee shop, studying under his father and younger brother on Yen Phu street. Those two coffee shops both serve egg coffee to diners, however, like a charm, people can drink iced black coffee, hot milk coffee anywhere, but as long as egg coffee, they remember about the house at 39 Nguyen Huu Huan.
The house has a very narrow entrance, but inside is a large and open space, decorated with many trees and old objects. The old paintings, the clock, the ceiling fan are nearly 80 years old... Mr. Nguyen Chi Hoa said that all of these furniture in his family have remained intact since his father was still alive.
"Many cafes have changed to trendy lounge chairs, we still keep the simple and rustic wooden chairs, so that guests coming here can remember what Hanoi was like in the distant past," said Mr. Hoa.
Mr. Hoa is still in charge of roasting and grinding coffee every day, one of the extremely important stages that needs the traditional secret to a delicious and different cup of egg coffee. Hoa's wife is still the best egg coffee maker in the house.
