Vecio Macello, at the turn of the last century, was a collection of rooms used to prepare freshly slaughtered meat: looking up you could see a system of mesh tubes, used for the pressure of steam, needed. for some meat preparation and pasteurization processes. At that time, the banks of the Adige, where the slaughterhouses were located, formed a rich swath of land in stilts and mooreds for barges traveling upstream from the Adriatic, carrying goods, spices and fish. Fresh is covered by its proximity to vibrant Venice, the symbol and engine of a thriving food trade and beyond. It is precisely the memory of that heterogeneous market that inspires our cuisine, based on the use of fresh fish with some distinctive meat dishes.
