Right in the heart of Budapest, near St. Stephen's Basilica is a Michelin 1-star restaurant, Borkonyha Winekitchen. The restaurant's cooking style is a fusion of French bistro and contemporary Hungarian cuisine. Borkonyha is always on the "must visit" list of any foodie in Budapest, even the famous Hollywood actor couple Ashton Kutcher – Mila Kunis are also seen enjoying the food here.
From the outside, Borkonyha gives diners a feeling of gentle relaxation with an outdoor terrace space equipped with small fresh flower pots, fairly light lights running along the fabric roof, brown wooden tables and sedge chairs. Inside the restaurant and bar are solid wooden chairs along the cast iron dining table with saffron and white wall colors, creating a warm feeling in a friendly atmosphere as if waiting for diners to visit. As the name suggests, the restaurant has an extensive and varied collection of wines with over 200 varieties, most of which are from Hungary. Diners can choose a bottle from one of the famous wineries, try something from smaller producers or listen to the recommendations of the wine experts at the restaurant of their choice.
Chef Ákos Sárközi constantly surprises diners with creative dishes made with a variety of fresh ingredients every day. Sárközi loves to cook for rich flavors and is open to influences from across Europe. As a result, he has invented many interpretations of Transylvanian and Hungarian food into classic dishes from France, Spain or Italy.
In Hungarian restaurants, things often happen at a fast pace with dishes following one after another and glasses of wine always filled. Diners are usually greeted with a glass of Hungarian wine (Kreinbacher Prestige) and a wide variety of breads including raisin bread, cashew bread, cummin flavored bread, and an assortment of colored breads. Special squid has a delicately balanced taste.
Foie gras combined with aszú wine from the famous Tokaj wine region is one of Borkonyha's signature dishes. This rich duck liver has a creamy and paper-thin texture with crispy outer grass. The restaurant's other standout is mangalica (known as the "kobe" of pork) – a Hungarian wild boar with tender meat, rich flavor, and a layer of fat interspersed like marble. The entrees are an assemblage of prized meat dishes such as lamb, roast quail and wagyu beef, with fresh seasonal vegetables. The daily specials written in chalk on the blackboard are also remarkable.
For diners who like to eat fish, they can order bluefin tuna, grilled just cooked, served with salad and caviar. The fish is as soft as butter and the spicy sauce blends together into a perfect pair. The recommended wine is Sauska, Kadrka Ördögárok Villány 2013, light red and fruity.
Among the Michelin-starred restaurants in Budapest, Borkonyha is one of the few with a relatively relaxed atmosphere like a bistro, but the quality of the food is always skillfully prepared and presented. with premium ingredients and delicate Hungarian accents.
