Where the sea ('mer') meets the sky (ciel'), Merciel offers a one-of-a-kind dining experience created by Chef Yoon Hwa-young and Park Hyun-jin. Before turning the ingenious fine dining establishment into a fine dining spot on Busan's dalmaji-gil hill, the owner's chefs (who are also a couple of restaurant owners) have mastered the methods. authentic French cuisine while learning from the famous Jean François Piège and Pierre Gagnaire.
The three-story building where the restaurant is located is complete with two other unique spaces: Merciel is the largest French restaurant in Busan, divided into two areas. Located on the first floor, Merciel offers what its name suggests: panoramic ocean views through floor-to-ceiling windows as well as an outdoor terrace and set-menu specializing in French cuisine. Located on the 2nd floor is a laid-back brasserie that mainly serves Italian food. There is also an art gift shop called Merciel Bis, as well as boutiques that cater for private events. All this is arranged in a small but attractive building with sundry stairs and elevator connecting the floors.
Chef Hwa-Young Yoon has 12 years of experience working at Michelin-starred restaurants in Paris. Combining this expertise with his own culinary technique, he demonstrates a fusion of Korean and European cuisine. Chef Yoon created French-Korean beef tenderloin steak, spicy lobster tail with risotto rice and cauliflower, and crispy salmon gravlax with light curry, coconut cream, and herb salad.
The menu at Merciel restaurant has three types: “ciel course” costs 88,000 won, “mer course” costs about 108,000 won, and “full course” costs about 138,000 won. All dishes are prepared by chef Yoon.
The brasserie on the 2nd floor is also well worth a visit, serving Italian food and French snacks like steak tartare and excellent caesar chicken salad, along with rarer pastas like parmeggiano reggiano and merlanovo .
