Pattaya fried rice is a Malaysian dish, made by wrapping chicken fried rice in an omelette bag. This unique dish consists of chicken fried rice in tomato sauce, wrapped in a soft omelette. In fact, fried rice in Pattaya is excellent for many reasons. It is suitable for any meal of the day. An omelette with every bite of rice really makes it perfect. It is also known as Nasi Goreng Pattaya.
Ingredients for making fried rice
- 2 cups rice (preferably cooled overnight)
- 100 grams boneless chicken breast and cut into small pieces
- 100 grams of peeled shrimp
- 1 carrot cut into cubes
- 2 tablespoons tomato sauce
- Thinly sliced chives
- 2 tablespoons vegetable oil
- Chicken seasoning
- 1/4 teaspoon salt
Spices needed for fried rice:
- 1 tablespoon fish sauce
- 1 teaspoon salt
- 1 teaspoon white pepper
- Ingredients for the omelette:
- 2 eggs
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1 teaspoon cornstarch or potato starch
- 1 teaspoon water
Other ingredients
- 1 sliced tomato
- 1 sliced cucumber
- 1 red chili cut into long stripes
How to make Pattaya fried rice
Finely chop the minced shallot and minced garlic, then cut the chicken and carrots into small cubes and peel the shrimp. Cut a tomato, cucumber and chili for garnish, then we're ready to fry the rice!
Continue to heat 2 tablespoons of oil in a pan over high heat until very hot. Add minced garlic and chopped chives. Saute them until light brown and fragrant.
Then add the chicken and carrots. Continue sautéing until carrots are tender and meat is just cooked through, about 2 minutes. Then add the tomato sauce.
Next, you need to add fish sauce and salt to them. Mix gently. Tear shrimp and sauté until shrimp turn pink. And then you put rice in it. Continue sautéing and stirring until all ingredients are well mixed. Place the mixture on a plate. Set aside and we are ready to make the omelette to wrap the fried rice.
When the eggs are almost cooked, quickly place the fried rice in the center. Fold the 4 sides of the omelette to cover the rice. Place a flat plate over the omelette and carefully flip it over. Finally, garnish with some ketchup or chili sauce on top
