Sushiyama Shinjuku offers omakase, a menu based on the concept of "a little bit of Hokkaido seafood and ingredients from Japan's four seasons in abundance". After tasting the famous Kaisen Chawanmushi, which locks in the flavour of the seafood, diners are invited to eat a single piece of the dish and enjoy a variety of seasonal flavours by alternating between snacks, tempura and nigiri.
